Gdansk Poland
I flew from Krakow to Gdansk - largely so I didn’t spend an entire day on the train. Gdansk was very worth it and was a week to relax after a week of very heavy history. There is still a lot of history in Gdansk, but the town was setting up for St. Dominic’s fair, which occurs every August, so it was quite festive. Unfortunately, I was there too soon to actually see the fair.
The entire town is quite walkable, but does get busy with tour groups coming off cruise ships - so keep this in mind. There weren’t many restaurants that cater to vegans - I don’t think I found any when I was there, but lots of little groceries with pre-made salads, etc. I did have a tiny kitchen in my airbnb.
Both climbing to the top of Saint Mary’s Basilica in Gdansk and the World War 2 museum are worth your time.
I’d highly recommend the town of Sopot - a short train ride away. Less tourists, but lots of locals out to the beach for the day. This is a smaller town on the Baltic Sea. Absolutely a place I would look at for a slow nomad spot in the future.
